Why Can’t IBU is Stillwater’s response to a beer world obsessed with IPAs and IBUs. Seemingly tired of the question “Don’t you make an IPA ?”, Brian provides this answer with his usual humor and irony.
Rather than competing with IPAs that try to out-hop and out-ibu each other, he offers a beer with low IBU that still exhibits IPA-esque hoppiness. He also uses belgian yeast to provide an added dimension to the flavor. Most IPAs are one or at best two-dimensional, but WCIBU has three dimensions (illustrated by the 3D bottle label). in Brian’s words: Hops, Yeast, and Fun. The result is a beer that may or may not be called an IPA, but definitely is tons of fun, refreshing, flavorful, unique, and yes, hoppy. The question is Why Can’t IBU? The answer is, Stillwater doesn’t want to be.

Why can’t IBU はIPA やIBU にばかり関心のあるビール界に対するレスポンス。おそらくブライアン氏はこの質問にうんざりしたのだろう。―「IPAは造らないの？」 彼はユーモアと皮肉を込めてこの作品で応えた。Out-Hop（とにかくホッピー）やOut-IBU（とにかく苦い）のような IPA 造りに励み他のIPA と競合するのではなく，彼は”確かに IPA っぽい”ホッピーさがあり，さらに IBU低めのビール創りに挑んだ。また，香りづけというディメンション（次元）を加えるためにベルジャンイーストを使った。ほとんどの IPA は１Ｄ（１次元）か良くても 2Ｄ（次元）の世界。しかしこのWhy Can’t IBU は3 次元の世界を表現している。（ラベルも３Ｄで描かれている。）ブライアンの言葉を借りると，①ホップ②イースト③楽しい。その結果 IPA と呼ばれるような，いや呼ばれないかもしれないような作品を完成させた。とは言ってもやはり口の中は楽しく、リフレッシュでき，香り高くユニーク。そしてもちろん，ホッピー！Why can’t IBU?（IBU: I be you）どうして私はあなたみたいな IPA になれないの？答えはこれ。スティルウォーターはなりたくないから。
